Cupcake Meatloaves
College life is all about simple meals! I wanted to make something simple and easy to freeze to save for later. Meatloaf is often a favorite in every home and a wonderful comfort food. This meal is quick, easy, and light on the wallet. Have fun and bake away!
Recipe
1 pound lean ground beef
1 cup bread crumbs (I just used sliced bread cut into small pieces)
1/2 cup Ketchup
1 egg
1 Tablespoon brown sugar
1 teaspoon garlic powder
1/2 teaspoon onion powder
salt and pepper to taste
Directions: Preheat oven to 375 degrees. Mix all ingredients together in no particular order. Grease cupcake tin. Scoop uncooked meatloaf and place in cupcake tin (to give an even distribution I used a 1/4 cup measurer). Bake for 20 minutes. Makes about ten meatloaf cupcakes.
Add veggies to your liking!
